I’m going to have to come up with a better title for my daily posts because if this blog lasts (not to say I’m not committed, but we have seen other blogs I’ve started and then let fizzle) the numbering thing might get old, stupid, or out of hand. Oh well, for now the numbers stick.
Today I have been incredibly hungry. I am sure this is just my stomach adjusting to the new lack of being full, but man it’s obnoxious today. The afternoon was the worst part is because I went to the gym after work because I just couldn’t drag myself out of the bed this morning. I had to find something to eat before the gym so that my stomach wouldn’t sound like a monster while I was running. I’m sure other gym-goers would have loved that. My only resort at the office was to leave (not a good idea, would have resulted in some sort of indulgence of the not-healthy variety) or to eat the 3rd flavor, Oreo, of the 100 calorie bars. I ate one bite of it before I decided that the 100 calorie people at Nabisco went completely in the wrong direction with these “chewy granola bars.” The problem with them is that the chewiness is overdone and the flavor of the bar (the part I look forward to…hello? I love oreos!) is underdone. Not a good combination. The other 9 bars in the box are going in the trash can and tomorrow I’m going to try new 100 cal cheddar chex mix packs.
After work (while starving) I went to the gym. Did the elliptical for 16 minutes and ran 2 miles in 20:30 and cooled down for five minutes. Still not lifting weights but will be adding that or classes in the next few weeks. I really want to try out this BOSU conditioning class I always see, but am also petrified of. It looks like a great and super hard work out. At the end of my work out, I finally signed up for my free Fitness Evaluation, which includes a body composition test in this pod thing. My appointment is next Thursday — I’ll post the results, although I’m sure they’ll be scary.
Food for the day:
B: cheerios and a banana. Just bought the Cheerios on Monday night and had already forgot about them.
L: Chicken Carbonara Lean Cuisine — in my opinion this is without a doubt the best frozen meal that exists. I love this one. I try to not eat it all the time so I don’t get sick of it, but seriously I think I could eat it every day for lunch. That would also not make for very good bloggins, so I’ll refrain, but if you haven’t tried it out, you should!
S: horrible 100 cal Oreo bar; Twix fun-sized snack (blame the nice secretaries who keep candy at their desk! but again, not horrible to have ONE fun-sized candy bar…sigh)
D: Tonight I tried to healthify (allegedly that’s not a word, I’m making it one, as of this second) my favorite recipe: Chicken Parmesan. Usually I buy thin sliced chicken, dip it in egg and then cover it a coating of shredded parmesan and italian bread crumps. Then I’d fry it in a liberal amount of oil and serve with sauce, pasta, and melted mozzerella on top.
Tonight, I eliminated the parmesan from the bread coating (so maybe it’s not chicken parmesan anymore?), bought regular sized boneless chicken breasts, fried the chicken for 2 minutes in a bit of olive oil and then baked the chicken for 20 minutes on 400 degrees. I poured the sauce in the pan at this point and flipped the chicken and then cooked for 10 more minutes. I threw on some 2% mozzarella cheese in the last few minutes of baking on one of the pieces (the rest are for leftovers). Admittedly, the piece of chicken I ate was big (probably 8-9 ounces). I paired the chicken with a bit of pasta (about an ounce) and steamed vegetables.
If you are looking for a good way to steam vegetables you should look into one of these. The only downside of it is that it’s small, but it does the job well.
